Textured soy croquettes

Delicious and healthy recipe for Textured Soy Croquettes, very easy to prepare thanks to the Küken TOUCH 9000 food processor.

 100 g de soja texturizada
 250 g de harina
 1 l de leche de soja
 50 ml of olive oil
 100 g onion
 2 garlic cloves
 3 huevos
 Breadcrumbs
 Nutmeg
 Salt

 Blade accessory
 Solvent accessory
 Spatula

Elaboration

First of all we put 100g of texturized soybeans to soak in a container with twice the volume of water than soybeans. With 15 minutes is enough.

We mount the blade accessory on our Küken robot.

Add 100g of peeled onion, in large pieces and 2 whole peeled cloves of garlic.

Chop 6 seconds at speed 6.

Open the lid and with the help of the spatula push to the bottom the remains that may have been left on the wall of the glass.

We replace the blade accessory with the extraction accessory.

Add 50ml of olive oil and a pinch of salt.

Cook for 10 minutes at 120 ° C and speed 1.

Add the well-drained texturized soybeans.

Cook for 3 minutes at 110ºC and speed 1.

We replace the extraction accessory with the blade accessory.

Add 1 litre of soya milk, 250g of flour, 1 teaspoon of salt, a pinch of ground nutmeg and salt and pepper to taste.

Cook for 7 minutes at 100ºC and speed 4.

Let the dough cool for a while and shape our croquettes. Dip them in egg and breadcrumbs and fry them in plenty of hot oil (see tips).
