Egg and Dairy Free Cupcakes Recipe
100% vegan, egg and dairy free muffins recipe. Yes, it is possible to bake without milk, eggs or butter...and without giving up a delicious taste and a fluffy texture.
This recipe is very easy to prepare, so the little ones in the house can give us a hand and start experimenting with us in the kitchen. Do not give up eating something sweet from time to time, but better if we do it at home.
If we prefer, we can substitute the orange juice for the same amount of vegetable drink, for example, soy beverage will be very good.
We mount the blade accessory on our Küken robot.
Add all the ingredients in the order they appear in the list; 60ml water, 200ml sunflower oil, 250ml natural orange juice, 250g brown sugar, the zest of one orange, 50g cornflour, 350g wholemeal flour, 20g baking powder.
Mix for 40 seconds at speed 5.
Transfer the dough to a piping bag and let it cool in the fridge for half an hour.
Preheat the oven to 200ºC with heat up and down.
Prepare the muffin tins and fill them generously with the help of the piping bag.
Bake the muffins for 20 minutes, we will be aware so that they do not burn, depending on the oven can heat more or less.
Let the muffins cool and they are ready to eat.
