Mashed potato and mushroom recipe with teriyaki sauce

With this recipe we could say that we have three recipes in one. On the one hand, the recipe as we present it here, on the other, the base for a delicious and easy-to-prepare mashed potato, which will be ideal to accompany a multitude of dishes. And finally, the Teriyaki sauce, which will be useful for other recipes that we want to give them an oriental touch. In the recipe booklet you can also find the Teriyaki sauce recipe.  1 kg de patatas
 360 ml de leche
 40 ml de aceite
 230 g de setas variadas
 Nutmeg
 Pepper
 Salt
For the teriyaki sauce
 75 ml de salsa de soja
 30 ml de vinagre de arroz
 2 tablespoons de azúcar moreno
 2 garlic cloves
 5 ml of olive oil
 20 ml of water
Küken Accessories

We mount the extraction accessory on our Küken robot.

Add 1kg of peeled and chopped potatoes, 360ml of milk and a teaspoon of salt.

Cook for 35 minutes at 90ºC and speed 1.

We replace the extraction accessory with the blade accessory.

Add 20ml olive oil and ground pepper and nutmeg to taste.

Blend for 40 seconds on speed 4.

Set aside the mashed potatoes in a bowl.

Remove the blade attachment, wash the mixing bowl of the Küken food processor and attach the stirring attachment.

Add 20 ml of olive oil, 230g of mushrooms, previously washed and cut into medium-sized pieces, and season to taste with salt and pepper.

Bake 10 minutes at 100°C and speed 1.

Set aside the mushrooms in a bowl.

Remove the stirring attachment, wash the mixing bowl of the Küken food processor and attach the blade attachment.

Add 75ml soy sauce, 30ml rice vinegar, 2 tablespoons brown sugar, 2 peeled garlic cloves, 20ml water and 5ml olive oil.

We grind for 20 seconds at speed 6.

Remove the cover and with the help of the spatula we push the remains that may have remained on the wall of the glass down.

Cook for 10 minutes at 100ºC and speed 2.

Our dish is ready for plating; place the mashed potatoes on the base, then the mushrooms and finally pour the Teriyaki sauce on top.
