Brie cheese can be replaced by a cheese with a similar soft texture, such as Camembert cheese.

We can also substitute the Parmesan cheese for a cheese with a similar hard texture, such as Pecorino cheese.

Cheese sauce

 250 g of Brie cheese
 100 g Parmesan cheese
 200 ml of cooking cream
 60 ml of white wine
 Pepper

Place the mixing bowl in the Küken food processor without any accessories.

Add 60 ml of white wine and close the lid leaving the filling hole open.

Cook for 3 and a half minutes at 85ºC.

We mount the extraction accessory on our Küken robot.

Add 200 ml of liquid cream.

We put the lid on closing the filling hole.

Cook for 5 minutes at 80ºC and speed 2.

Add 250 g of chopped Brie cheese without removing the rind.

Cook for 3 minutes at 80ºC and speed 2.

We replace the extraction accessory with the blade accessory.

Add 100 g of Parmesan cheese in small pieces.

Grind for 10 seconds at speed 5.

Remove the cover and with the help of the spatula we push the remains that may have remained on the wall of the glass down.

Grind for 10 seconds at speed 5.
