The ideal way to prepare this recipe is to use fresh broad beans and peas, alternatively we can use frozen ones, although it is important that they are completely defrosted when cooking.

We can present our dish with freshly ground pepper and some chopped fresh mint leaves on top.

Baby broad beans confit with peas

 400 g of baby broad beans
 300 g of peas
 300 ml of olive oil
 4 garlic cloves
 2 sprigs of fresh mint
 Pepper
 Salt

We mount the extraction accessory on our Küken robot.

Add 300 ml of olive oil, 400 g of baby broad beans, 300 g of peas, four peeled and halved garlic, two whole sprigs of mint and salt and pepper to taste.

Cook for 30 minutes at 75ºC and speed 1.

Check that the beans and peas are well cooked, if they are not, go back to the previous step and program 5 minutes at 75ºC and speed 1. Repeat this step as many times as necessary until the desired cooking point is reached.
