This type of recipe stands out for its creaminess, something that we get with the addition of cheese and butter. But above all, it is very important not to stop stirring throughout the cooking process, so this type of recipe is perfect in our Küken robot.
We recommend having the butter out of the fridge for a while before preparing it, so that it has an ointment texture and integrates more easily with the rest of the ingredients.
Although it is always advisable to prepare this recipe with the type of rice indicated, we can substitute it with
another with similar characteristics.
We mount the blade accessory on our Küken robot.
Add 100 g of onion, peeled into large pieces and two peeled garlic cloves.
We chop 20 seconds at speed 5.
Remove the cover and with the help of the spatula we push the remains that may have remained on the wall of the glass down.
We replace the blade accessory with the extraction accessory.
Add 30 ml of olive oil and a pinch of salt.
Cook for 7 minutes at 120°C and speed 1.
Add 400 g of rice and 30 ml of olive oil.
Cook for 4 minutes at 100°C and speed 1.
Add 150 ml of white wine and 500 ml of vegetable stock through the filling hole. Leave the cap open to facilitate the evaporation of the alcohol in the next step.
Cook for 8 minutes at 100ºC and speed 1.
Add 350 g of peeled and diced pumpkin in small cubes, about 1 cm. Season with salt and pepper to taste and integrate everything with the help of the spatula.
Bake 10 minutes at 100°C and speed 1.
We check that the rice is cooked well, if it is not, we go to the next step and we will repeat the time necessary to reach the desired doneness. If it is well done, go to step 16.
Cook for 2 minutes at 100ºC and speed 1.
Add 25 g of creamy butter and 80 g of blue cheese in small pieces. With the help of the spatula, we remove until all the ingredients are well integrated.
