Recipe of Potato stew with artichokes and chorizo sausage
Potato stew with artichokes and chorizo recipe. A perfect spoon dish to enjoy on cold days, from December to March.
If we want to give our recipe a more intense flavour, we can add the flesh of a ñora pepper. To do this, we must soak it for a while beforehand and add it to the stew along with the potatoes in step 10.
We present a balanced and complete stew, ideal as a unique dish as it contains the main nutrients that our body needs; carbohydrates, protein and vegetables.

We mount the blade accessory on our Küken robot.
Add 100g of onion, peeled and roughly chopped, 100g of red pepper and 70g of green pepper, cleaned and roughly chopped, and 2 cloves of garlic, peeled and halved.
Chop 6 seconds at speed 6.
With the help of the spatula push to the bottom the remains that may have stuck to the wall of the glass.
We replace the blade accessory with the extraction accessory.
Add 40 ml of olive oil and season to taste with salt and pepper.
Cook for 10 minutes at 120 ° C and speed 1.
Add 2 chorizo sausages cut into thick slices.
Cook for 2 minutes at 120°C and speed 1.
Add 600g of potatoes, peeled and cut into medium-sized pieces, and season lightly with salt and pepper.
Cook for 2 minutes at 120°C and speed 1.
Without removing the lid, we add 500ml of water through the filling hole.
In the next step, programmed at 20 minutes, when there are 15 minutes left, add the peeled and quartered artichokes through the filling hole without opening the lid of the food processor.
Bake 20 minutes at 120°C and speed 1.
Check that the artichokes and potatoes are well cooked, if necessary repeat the previous step for a few more minutes.
