Delicious sole with romesco sauce and tomato spherifications, ideal for special occasions, such as celebrations and holidays. As mentioned in step 1, we must first have a litre of sunflower oil in the freezer and a ñora pepper soaking in water, both an hour before preparing the recipe. To accompany the sole we have made romesco sauce and tomato spherifications, if we consider that it is very difficult to prepare the spherifications, we accompany our sole only with the romesco sauce, in this case it will not be necessary to put the sunflower oil in the freezer. We also encourage you to prepare the spherifications, perhaps the first time they will not be perfect, but it is always nice to experiment in the kitchen.

 75 ml of olive oil
 50 g of roasted hazelnuts
 50 g of toasted almonds
 100 ml de zumo de tomate
 1 l of sunflower oil
 1 l of water
 1 g de agar-agar
 1 ñora
 1 clove of garlic
 20 ml of vinegar

First of all, pour a litre of sunflower oil into a bowl and put it in the freezer for an hour before starting to prepare the recipe. We also soak a ñora pepper in water.

Step 2. We mount the blade accessory on our Küken food processor.

Step 3. Add 200g of fried tomato, 75ml of olive oil, 50g of almonds and 50g of hazelnuts, both peeled, 20ml of vinegar, the meat of the ñora that we had soaked, a garlic and salt to taste.

Step 4. Blend for 2 minutes on speed 4.

Step 5. Set aside our romesco sauce in a bowl.

Step 6. Clean the mixing bowl of the food processor and attach the stirring attachment.

Step 7. Add 100ml of tomato juice.

Step 8. In the next cooking step we will be attentive and when the tomato juice starts to boil, we will pour 1g of agar agar through the filler cap.

Step 9. Cook for 10 minutes at 100ºC and speed 1.

Step 10. Reserve the juice in a bowl.

Step 11. Pour the tomato juice into a kitchen syringe.

Remove the sunflower oil from the freezer and gradually pour in the tomato juice with the syringe, the tomato pearls will form, leave the pearls to rest for about 15 seconds and carefully transfer them to a bowl with cold water. Just leave them for a few seconds and then place them on a plate to be used for plating.

Step 13. Clean the robot tumbler again and place it without any accessories inside.

Step 14. Add 1 litre of water.

Mount the deep steam tray on top of the glass, place the soles inside, one by one wrapped in cling film. Put the lid on.

Cook for 40 minutes in high steam mode.

Step 17. Now we can plate our recipe; place a sole on each plate, with romesco sauce on top and the tomato pearls on the side to accompany it.
