It is very easy to prepare and in a very short time, the dough does not need to rest so we can make the coca at the time. For future elaborations we can add any other ingredient that we like, such as grated cheese, as always the question in the kitchen is to experiment according to our own tastes.
First, we preheat the oven to 200 ° C.
We mount the blade accessory on our Küken robot.
Add 60ml of olive oil, 60g of lard and 150ml of water.
Beat for 1 minute at 37ºC and speed 2.
Add 350g of flour, 25g of fresh yeast and a teaspoon of salt.
Knead for 20 seconds at speed 6.
We reserve the dough in a bowl.
Add 600g of peeled and coarsely chopped onion.
Chop 5 seconds at speed 5.
Remove the cover and with the help of the spatula we push the remains that may have remained on the wall of the glass down.
We replace the blade accessory with the extraction accessory.
Add 40ml of olive oil, a teaspoon of salt and ground pepper to taste.
Cook for 12 minutes at 120ºC and speed 1.
We lay out the dough and place the onion that we have fried and the cubed bacon on top, all evenly distributed throughout the dough.
Replace the stirring attachment with the whisk attachment.
Add two eggs, we recommend breaking them on a separate plate, ensuring that no shell remains.
Beat 5 seconds at speed 5.
We pour the beaten eggs on the dough and add a little ground pepper.
Bake until golden brown on top, about 20-25 minutes.
Our coke is ready.
