A tip when cleaning artichokes is to wear plastic gloves, this way we will prevent our hands from getting stained with the dye released by the artichokes. Also if we add a little lemon juice, we will make them put black and keep their natural color.
We mount the extraction accessory on our Küken robot.
Add 65 ml of olive oil.
Heat the oil for 2 minutes at 120°C on speed 1.
Add 600g chopped ribs and season to taste.
Bake for 15 minutes at 120°C and speed 1.
Add 100 g of onion and two garlic, all peeled and finely chopped. We also add two artichokes already clean and cut into quarters.
Cook for 5 minutes at 120°C and speed 1.
Add 100g red pepper, 60g green pepper and 100g green beans, all very clean and in medium chunks. We also add two tablespoons of fried tomato.
Cook for 10 minutes at 120 ° C and speed 1.
We add 400g of rice.
Cook for 2 minutes at 120°C and speed 1.
Add 700 ml of broth and a sachet of saffron.
Bake for 15 minutes at 120°C and speed 1.
We check that the rice is well cooked and if necessary we add salt or pepper. If you are not yet well cooked, go back to the previous step and set the robot to 5 minutes, 120°C and speed 1. If the rice is well cooked but we have corrected the salt or pepper, we program only 1 minute.
