We can present our dish with some mushrooms cut into slices and slightly marked on a griddle.

Although it is always advisable to prepare this recipe with the type of rice indicated, we can substitute it for another with similar characteristics.

Risotto Milanese

 400 g of Arborio or Carnaroli rice
 900 ml of vegetable stock
 100 ml of dry white wine
 300 g of mushrooms
 100 g of Parmesan cheese
 150 g onion
 2 garlic cloves
 85 ml of olive oil
 60 g butter
 Pepper
 Salt

If the cheese is ungrated, we introduce it in pieces in the robot with the blade accessory on.

Program the food processor for 20 seconds at speed 8.

Open the lid of our Küken and check that it is well grated, if not, repeat the previous step. This will depend on the size of the pieces and the hardness of the cheese.

Remove the cheese with a spatula and set aside.

If we already had the grated cheese and we did not need to grate it, we mount the blade accessory in our Küken robot.

Add 150 g of coarsely chopped onion and 2 peeled cloves of garlic.

Program the food processor for 30 seconds at speed 5.

Open the lid of our Küken and with the help of the spatula, remove the remains that may have stuck to the wall of the glass.

We replace the blade accessory with the extraction accessory.

Add 50 ml of olive oil and season to taste.

Program the robot for 12 minutes at speed 1 and 120ºC temperature.

Open the lid of the food processor and add 300 g of previously washed and chopped mushrooms. Season to taste with salt and pepper.

Program 5 minutes at speed 1 and 100ºC temperature.

Add the 400 g of rice and 35 ml of olive oil.

Program 4 minutes at speed 1 and 100ºC.

Add 100 ml of wine through the hole in the lid, without opening it. After 3 minutes, add 900 ml of stock, a pinch of salt and leave everything to cook together. If no wine is used, add 1 litre of stock at this point with a pinch of salt.

Program the machine for 14 minutes, speed 1 and 100ºC.

Open the lid and add 60g of butter in pieces, at room temperature, and the grated Parmesan.

Stir everything with the help of the spatula until all the ingredients are well integrated.

Serve with a little freshly ground pepper on top and ready to eat.
