When preparing this recipe we must take into account the time needed to previously hydrate the couscous, 20 minutes.
If we want we can substitute the couscous for bulgur to prepare the recipe, it is another version of Tabbouleh that will be equally delicious.
The tomatoes that we use to prepare our Tabbouleh should be fleshy and ripe, we can choose for example pear tomatoes or similar.
We put to soak 200 g of couscous in a bowl with warm water and a little salt, it is important that the water completely covers the couscous. Leave to stand for 20 minutes.
Cut the tomatoes into cubes of about one centimeter and set aside in a bowl.
We mount the blade accessory on our Küken robot.
Add the mint and parsley leaves.
Chop 8 seconds at speed 7.
Reserve the herbs in a bowl.
Add 200 g of spring onion and 100 g of red pepper, all in medium pieces.
Chop 10 seconds at speed 5.
In a large bowl, add the well-drained couscous, herbs, spring onion, pepper and tomato.
Make a vinaigrette with the oil, lemon juice and salt and pepper to taste. Add it to the bowl and mix well to integrate all the ingredients.
