From the basis of this recipe we can make many types of jam, it remains only to choose the desired fruit.

As not all fruits have the same characteristics we must adjust the time needed to achieve the desired texture, for this we make a full program of 30 minutes and test the jam letting it cool slightly. Afterwards, if necessary, we program cycles of 5 minutes until we get the desired result.

Keep in mind that the colder the jam is, the thicker it will be.

Mermelada de ciruelas

 1 kg de ciruelas maduras
 300 g de azúcar

We mount the extraction accessory on our Küken robot.

Add 1 kg of plums in small pieces, 300 g of sugar and 60 ml of lemon juice.

We close the lid and leave the filling hole open to facilitate evaporation.

Cook for 40 minutes at 110ºC and speed 1.

We check that it has a texture of jam, for this we place a tablespoon on a plate and wait for it to cool. When hot, it is always normal for it to have a texture more liquid, if it still does not have the desired texture, we move on to the next step.

Cook for 5 minutes at 110ºC and speed 1.

Check the texture of the jam using the previous method. If necessary, repeat step 6 as many times as necessary until the desired texture is achieved.
