Mushroom and Cheese Croquettes Recipe

When preparing this recipe for mushroom croquettes with cheese, take into account the time the dough has to rest in the fridge, about 12 hours.

Ideally, the dough should be prepared the day before, so that the croquettes can be shaped more easily. Once the croquettes have been shaped, fry them in very hot oil.

If we have leftover croquettes without frying them, we can keep them in the freezer, well covered so that they do not pick up smells or flavours from other foods, and use them later. Perfect as an appetizer or as part of the daily menu.

Add 350g of assorted mushrooms, we can add fresh, tinned or frozen mushrooms, the important thing is to drain the excess water they may have, obviously if we choose frozen mushrooms we must defrost them beforehand.

Chop for 10 seconds on speed 10.

Transfer the chopped mushrooms to a bowl.

Add 100g of peeled and coarsely chopped onion to the blender.

Chop for 10 seconds on speed 10.

Add 40ml of olive oil, 60g of butter and salt and pepper to taste.

Transfer the mixture to a tray to cool, and once it has cooled, put the tray in the fridge, covered with cling film, for about 12 hours. After this time we can shape our croquettes, dip them in egg and breadcrumbs and fry them in very hot oil.
