Vegan chorizo recipe
The vegan chorizo is healthier and is prepared in a moment with very simple ingredients. In addition, you can use it to make many recipes that usually use chorizo in the traditional way, such as lentils or prepare your own recipes.
A low-fat, high-protein alternative to traditional chorizo.
When preparing this recipe and as indicated in step 1, we must take into account to put the textured soybeans to soak a few minutes before, with 15 minutes will be enough and if the water is hot even less time.
First of all we put 75g of texturized soybeans to soak in a container with twice the volume of water than soybeans. With 15 minutes is enough.
We mount the blade accessory on our Küken robot.
Add 70g of cashew nuts.
We chop 10 seconds at speed 6.
Set aside the chopped cashew nuts in a bowl.
Add 3 young garlic to the mixing bowl of the food processor.
Chop 6 seconds at speed 6.
We replace the blade accessory with the extraction accessory.
Add 30ml of extra virgin olive oil.
Cook for 2 minutes at 100ºC and speed 1.
Add the well-drained textured soya, the chopped cashew nuts, 100g of oat flakes, 2 small spoonfuls of sweet paprika, 1 small spoonful of hot paprika, 350ml of water and a small spoonful of salt.
Mix everything well for 50 seconds at speed 3.
We take the mixture out of the robot and with kitchen film we shape our "vegan sausages", we wrap them well, rolling them up at the ends as if they were candies.
We mount the deep steam tray on top of the robot's glass. Place the "vegan sausages" and put the lid on.
Steam for 30 minutes.
Remove the cling film and ready to serve.
