Stewed cheeks meat recipe
Today we are going to prepare a delicious stewed beef cheeks recipe. With a sauce that is very easy to prepare with the Küken food processor, which will result in a meat stew that will take your breath away, full of aroma and traditional flavour.
Pork cheeks are one of the tastiest and most interesting textured parts of the pig. It is a meat with hard fibres, so it is important to cook it well.
After stewed, it becomes mellow, tender and with an incomparable texture, making it perfect for the whole family.
In this recipe, we have chosen pork crackers because they have a smaller size, but if you prefer you can also prepare this recipe with veal cookies, surely with two pieces, that is enough for three portions.
This is another one of those stews that go wonderfully with a few fries.

First, we prepare the cookies, for this we remove all the meat with the help of a knife, finely chop it, removing it and season it with salt, pepper and thyme to taste.
We mount the extraction accessory on our Küken robot.
Add 65 ml of olive oil.
Heat the oil for 2 minutes at 120°C on speed 1.
We add the meat of the cookies.
Cook for 10 minutes at 120 ° C and speed 1.
Add 250g chopped onion, four peeled and sliced garlic cloves and a pinch of salt.
Cook for 10 minutes at 120 ° C and speed 1.
Without having to remove the food processor lid, pour 100 ml of Sherry wine through the filling hole. We let go open the filling to facilitate evaporation of the alcohol in the next step.
Cook for 10 minutes at 120 ° C and speed 1.
Add 250 g of clean mushrooms cut into quarters, if they are large mushrooms, we make more pieces.
Cook for 5 minutes at 120°C and speed 1.
