Artichoke and anchovy pâté

To prepare this recipe, start with fresh or thawed artichoke hearts, with which to cook them before making the pâté.

Another alternative is to use Canned Artichoke Hearts, since they are already cooked, we will have to skip the first five steps of the recipe, attach the blade attachment and start from step 6.

 300 g of artichoke hearts
 40 g of anchovies
 100 g cream cheese spread
 75 g of cured cheese
 45 ml of olive oil

We place the basket with its drive shaft inside our Küken.

Add 800 ml of water and a little salt to the glass and 300 g of artichoke hearts to the basket.

Bake 20 minutes at 120°C.

We cool the artichokes in cold water and drain them well so that they don't have any water.

Remove the cooking basket with its axis and place the blade accessory.

Add 75 g of aged cheese in medium pieces.

We chop 20 seconds at speed 8.

Add the artichoke hearts, 40 g of anchovies, 45 ml of olive oil, 100 g of cream cheese and the fresh basil, pepper and salt, to taste.

We grind for 10 seconds at speed 8.

Remove the cover and with the help of the spatula we push the remains that may have remained on the wall of the glass down.

We taste and correct the salt, pepper or basil if necessary.
