It is very important that when we add the onion to the robot it is very dry, for this we can use kitchen paper.

This caramelized onion is perfect to accompany numerous dishes; hamburgers, grilled chicken, fish, and so on and so forth.

 250 g of pickled red onion
 50 g sugar
 40 ml of liquid from the pickled onions

Elaboration

We mount the extraction accessory on our Küken robot.

Add 50 g of sugar and 40 ml of the liquid from pickling the onions.

Cook for 8 minutes at 100ºC and speed 1.

Add 250 g of pickled onions, well drained and cut into four pieces.

Close the lid, leaving the filling hole open so that the steam can escape.

Cook for 4 minutes at 100°C and speed 1.

Reserve the onions in a bowl, leaving the liquid in the glass.

Cook for 2 minutes at 100ºC and speed 1.

Check that the liquid has acquired caramel texture, if not, repeat the previous step.

Pour the caramel over the onions.
