To make this recipe we must have prepared two days in advance the mixture of soy sauce, vinegar, garlic and ginger (steps 1, 2, 3 and 4). Let it macerate in a closed glass jar in the fridge.

If we can't get the Chinkiang vinegar we can substitute it with apple vinegar.

 250 g Soba Noodles
 60 g Fried peanuts
 3 Cloves of garlic
 3 Ginger root
 130 ml Chinkiang Vinegar
 130 ml Soy sauce
 130 g Peanut butter
 40 g Sugar
 45 g Tahini
 60 ml Sunflower oil
 60 ml Water

We mount the blade accessory on our EASYChef robot.

Add 130 ml soy sauce, 130 ml Chinkiang vinegar, three cloves of garlic and the peeled piece of ginger.

Blend for 25 seconds at speed 5.

Keep the mixture in a closed glass jar in the fridge for 2 days.

After this time, strain the mixture and reserve the sauce in a bowl.

We mount the blade accessory on our EASYChef robot.

Add 60 g of fried peanuts.

Chop 25 seconds at speed 5.

Set aside the peanuts in a bowl.

We replace the blade accessory with the extraction accessory.

Add 40 g of sugar and 60 ml of water.

Cook for 4 minutes at 70ºC and speed 2.

We replace the extraction accessory with the blade accessory.

Add the reserved sauce, 130 g of peanut butter, 45 g of tahini and 60 ml of sunflower oil.

We grind for 20 seconds at speed 5.

Remove the cover and with the help of the spatula we push the remains that may have remained on the wall of the glass down.

We grind for 20 seconds at speed 5.

Reserve the sauce in a bowl.

Clean and dry the mixing bowl and mount the stirring attachment.

Add 1 litre and a half of water with a little salt.

Heat the water for 12 minutes at 100ºC.

Open our EASYChef and add 250 g of soba noodles.

Cook the noodles for 4 minutes at 100ºC and speed 1.

Drain the noodles and in a large bowl mix well with the sauce that we had reserved to integrate all the ingredients. Add the chopped peanuts on top.
