Egg and mascarpone cheese custard recipe

The quantities that we have presented in this recipe will be used to prepare eight standard size blanks, they must be cooked twice since the capacity of the tray it's four blanks.

We mount the whisk accessory on our Küken robot.

Add 350ml of milk, 250g of mascarpone, 140g of sugar and four eggs, we advise you to shell them in a separate bowl before adding them, so we make sure there is no shell remnants.

We beat 25 seconds at speed 5.

In the containers that we have chosen for making the flan, we put liquid caramel on the bottom, the We fill with the mixture and cover them with transparent film or foil one by one.

We wash the robot glass, put it back and add 1 liter of water.

We mount the deep steamer tray on top of the glass.

We place the containers that enter us and cover them with paper towels so that it absorbs the excess water that escapes during steaming. We put the lid on.

Bake 45 minutes at 120°C.

We check that our puddings are ready, for that we prick them with a toothpick and we make sure that comes out clean. If they are not yet defined, we move on to the next step and repeat it as many times as necessary.

Bake for 5 minutes at 120°C.

Let the puddings cool and put them in the fridge to cool them before eating them.
