Receta de tartaletas de pimiento confitado

Aperitivo perfecto para preparar en días festivos y celebraciones. Estas tartaletas de pimiento confitado son una auténtica delicia. Si queremos podemos meterlas unos minutos en el horno con el gratinador puesto antes de servirlas, el queso se fundirá y el resultado será aún más espectacular. Recomendamos montar las tartaletas solo unos minutos antes de servirlas, si lo hacemos con demasiada antelación el hojaldre se reblandecerá y perderemos el contraste del hojaldre crujiente con el resto de ingredientes.

 400 g of red pepper
 200 g onion
 200 g of bacon strips
 50 g of Parmesan cheese slices
 200 g sugar
 100 ml of vinegar
 50 ml of water
 20 ml of olive oil

 Solvent accessory

Step 1. We mount the blade accessory on our Küken food processor.

Step 2. Add 400g of coarsely chopped red pepper.

Step 3. Blend for 10 seconds on speed 4.

Step 4. Add 200g sugar, 100ml vinegar and 50ml water.

Step 5. Open the filler cap to allow the vinegar to evaporate well in the next step.

Step 6. Cook for 35 minutes at 115ºC and speed left 1.

Preheat the oven to 200ºC.

Step 8. Place a sheet of baking paper on a baking tray or rack, place the bacon strips on top and then another sheet of paper on top. Press with your hands so that the paper sticks to the bacon.

Step 9. Bake for 10 minutes or until the bacon is crispy.

Step 10. Remove the contents of the mixing bowl from the food processor and set aside in a bowl.

Step 11. Clean the mixing bowl of the Küken food processor and the blades, dry everything well and replace the blade accessory.

Step 12. Add the crispy bacon, breaking it up a little with your fingers as you add it.

Step 13. Chop 4 seconds on speed 5.

Step 14. Reserve the bacon in a bowl. With the help of a spatula, remove all the contents well.

Step 15. Replace the blade accessory with the remover accessory.

Step 16. Add 20ml of olive oil and 200g of julienned onion.

Step 17. Cook for 10 minutes at 115ºC and speed 1.

Set aside the onion on a plate.

Step 19. Assemble the tartlets. First place the pepper confit, then the poached onion, followed by the bacon and finally a few slices of Parmesan cheese. Our tartlets are ready to serve.
