Onion soup recipe

The origin of this onion soup is more humble than it may be considered today.

In the old days, it was a recipe prepared by rural people who did not have many resources and who used the few ingredients they had at hand: water, onion, stale bread, olive oil.

The best way to present this soup is with grilled cheese on top, just put it in the oven for a few minutes with the grill on and it is ready to serve.

 600 g onion
 50 ml de aceite de oliva virgen extra
 50 ml de vino de jerez
 4 rebanadas de pan frito
 1 l of water
 2 de pastillas de caldo de verduras
 Salt
 Pepper

We mount the blade accessory on our Küken robot.

Add 600g of peeled and coarsely chopped onion.

Chop 6 seconds at speed 6.

With the help of the spatula push to the bottom the remains that may have stuck to the wall of the glass.

Chop 6 seconds at speed 6.

We replace the blade accessory with the extraction accessory.

Add 50 ml of olive oil and season to taste with salt and pepper.

Bake 20 minutes at 120°C and speed 1.

Add 1 litre of water, 2 vegetable stock cubes and 50ml of sherry wine.

Bake 20 minutes at 120°C and speed 1.

Fry 4 slices of bread in olive oil and set aside on a plate with absorbent paper underneath.

Serve the soup with a slice of fried bread on top.
