Falafel Recipe 

Traditional falafel recipe. This dish originates from the Middle East and is a real delicacy, as well as being a healthy dish and a source of vegetable protein. Prepare it easily with the Küken TOUCH 9000 food processor. 

Falafel is traditionally served with yogurt sauce, a sauce that we can easily prepare with our food processor.

With the blade accessory on our food processor, add 1 plain unsweetened yoghurt, a squeeze of lemon juice, chopped chives and a pinch of salt. Blend it all for 20 seconds on speed 5 and put it in a bowl where we will dip our falafel.

We can also prepare it as a filling for a pita bread with salad and yoghurt sauce.

 200 g of dried chickpeas
 400 g of soaked chickpeas (12 hours)
 150 g onion
 2 garlic cloves
 2 coriander sprigs
 2 parsley sprigs
 1 teaspoon cumin
 1 teaspoon sweet paprika
 1 teaspoon salt
 1 yeast packet
 Pepper

First of all we must have 400g of chickpeas to soak a minimum of 12 hours.

We mount the blade accessory on our Küken robot.

Add 200g of dried chickpeas (not the soaked ones).

Chop 30 seconds at speed 10.

We check that it has a fine flour texture, if necessary we repeat the previous step. It is normal to make a lot of noise while chopping the chickpeas.

Set aside the chickpea flour in a bowl.

Add the chickpeas that were soaking, well drained, 150g of peeled and coarsely chopped onion, 2 peeled cloves of garlic, 2 sprigs of coriander and 2 sprigs of parsley, well washed, 1 teaspoon of cumin, 1 teaspoon of sweet paprika, 1 teaspoon of salt and freshly ground pepper to taste.

Blend for 10 seconds at speed 6.

Open the lid and with the help of the spatula push to the bottom the remains that may have been left on the wall of the glass.

Add 1 tablespoon of the chickpea flour and 1 sachet of baking powder.

Blend for 10 seconds at speed 6.

Let the dough rest for an hour in the fridge.

We make balls with the dough, as if we were making meatballs. Coat them with the chickpea flour and fry them in plenty of hot olive oil.

Our falafel is ready to eat, ideally served with yogurt sauce (see tips).

  1. I'm going to try it tonight, I replaced the dried chickpeas, chickpea flour, as I'm afraid to load the blades hehehehe. Tell me if the chickpeas can damage the blades or not?
