Pasta with Broccoli Pesto Recipe
Pesto is a classic Italian sauce that has countless versions: with lettuce, beetroot, spinach and... broccoli!
broccoli softens the flavor of the sauce while still having that pesto characteristic. Try making this pasta dish with broccoli pesto and you'll love it!
To prepare this recipe we can choose the type of pasta we prefer, macaroni, spirals, ribbons. It is always better to choose a wholemeal pasta as it will bring more fiber to our diet.
If we want our recipe to be suitable for vegans we can eliminate the parmesan cheese and choose a vegan option that we find in the shops, if we do not add it nothing happens. To prepare the pesto we can add some fresh basil leaves and reserve some leaves also to garnish the dish when serving.

We mount the extraction accessory on our Küken robot.
Add 1.2 litres of water to the mixing bowl of the food processor and place the cooking basket.
Add 350g of broccoli, well washed and discarding the largest and hardest stems.
Cook for 15 minutes at 120ºC and speed 2.
Set aside the cooked broccoli in a bowl and remove the cooking basket.
In the same water used to cook the broccoli, add 350g of the pasta of your choice and a small spoonful of salt. Put the lid on and leave the filling hole open. By default the next step is programmed to 15 minutes, we must adapt the time marked by the manufacturer.
Cook for 15 minutes at 120ºC and speed 2.
Drain the pasta reserving part of the liquid to prepare the pesto (100ml is enough).
Clean the bowl of the food processor and place the blade accessory.
Add the cooked broccoli, 120g of toasted almonds, 1 clove of garlic, 100g of grated Parmesan cheese, 60ml of olive oil, the zest of a lemon and its juice, and salt and pepper to taste.
Blend for 40 seconds at speed 6.
Add 100ml of the reserved cooking liquid.
Mix for 15 seconds at speed 5.
Transfer the pasta and pesto to a bowl and mix well before serving.
